Fresh-milled corn from Ballenger Farm is a world apart from shelf-stable commercial cornmeal. Stone-ground to order, it retains the germ — making it perishable (store in the freezer) and packed with rich, sweet, deeply corn-forward flavor. The milled option is ideal for skillet cornbread, corn muffins, polenta, grits, tamales, and corn pancakes. The whole corn kernels can be cooked as hominy, soaked and ground for masa, popped as popcorn, or milled at home in a grain mill for maximum freshness.
