Tallow-Roasted Summer Vegetables
Vegetables roasted in beef tallow come out crispier and more flavorful than any olive oil version. A revelation if you've never tried it.
Ingredients

2 mediumZucchinichunked
2 mediumYellow Squashchunked
1 cupTomatoeshalved

Melt tallow. Toss vegetables until evenly coated. Season well.
