Liver and Onions with Smoked Bacon
Classic pan-fried beef liver with sweet caramelized onions and crispy bacon. One of the most nutrient-dense meals you can put on a table.

1 lbBeef Liver
4 slicesSmoked Bacon
2 tbspUnsalted Butter
Instructions

Slice liver thin, soak in milk 15 min if desired to mellow flavor. Pat dry, season.

Render bacon until crisp. Remove. Caramelize sliced onions in bacon fat, 15 min.

Increase heat, sear liver 2 min per side — do not overcook. Top with onions and bacon.
