Braised Beef Tongue Tacos
Beef tongue is tender, rich, and silky after a low slow braise. Slice thin, char in a hot pan, and serve in warm tortillas. A taqueria classic.

Simmer whole tongue in seasoned water 3–4 hours until very tender. Cool in liquid.
